Tools your need:
-File Explorer (Y-Browser or Modo which is included inside the HelloOX 1.03)
-101F8847.txt
-HelloOX (If you haven't hack your mobile device)
First you need to hack your S60 3th Edition first, click here to find out how.
Now, to remove the S60 menu icon, just copy 101F8847.txt to C:\private\10202be9 and reboot your device. And you've done it.
